I told you yesterday about finding a prosciutto end on clearance at my local produce market, and made up Parmesan Prosciutto Potato Packets. Today, let’s get all low-carb appetizer-y with Prosciutto-Wrapped Avocado Slices. Note that these are not nice thin wrap-around slices of prosciutto — my “end,” alas, turned out to be mostly rind and wouldn’t slice up all pretty like that. Still darn tasty, though! I found this recipe on Food.com, and basically halved it for one avocado.
Prosciutto-Wrapped Avocado Slices
1 ripe avocado, sliced
About 1.5 oz prosciutto, cut into thin strips
1 Tbsp olive oil
2 Tbsp lemon juice
1 tsp chopped garlic
1 tsp chopped fresh oregano
black pepper, to taste
Wrap prosciutto slices around avocado slices. Mix all other ingredients together to form a dressing, pour over avocado, and serve. That’s lunch! Or an appetizer — if you are making it to serve to other people, though, get the nice thin-sliced prosciutto from the deli for a prettier presentation. Such a fantastic flavor combination, and the chewy, salty prosciutto pairs well with the creamy, mild avocado.
