Chicken with Mushrooms

You know how sometimes you kind of need to go grocery shopping, but it's something like 5000 degrees below zero outside? So you of course don't want to leave your nice warm house. Accordingly, you start playing around on the Internet, hoping to find help in scratching up a recipe to use up the food you have sitting around already... Yeah. That's Chicken with Mushrooms, all right! It's so pretty and simple, too. I found this recipe for Chef John's Chicken and Mushrooms on the Google -- and … [Read more...]

Spinach Salad in a Jar

Seeing as our last couple of recipes were basically made out of oil and Splenda (OK, coconut oil, but still!), I thought it was time to get back to some healthy basic veggies here. You really can eat healthy on the cheap, with just a little planning and a willingness to shop and eat around the sales. This is a Sunday Scratchups recipe in all ways! Check it out: At ALDI today, organic baby spinach was $1.49, organic grape tomatoes $1.99, mushrooms were $.69, and avocados $.89 each. I could … [Read more...]

Slow Cooker Artichoke Chicken

Last week, Dominick's in Chicagoland had its 75% off grocery going-out-of-business sale. This was a bittersweet shopping experience -- while the deals were great (and random, depending what was left on the shelf), I'll miss both the store and many of the cashiers. I ended up with some random bargains on things like cans of artichoke hearts and a bag of sundried tomatoes, so decided to play with colors and textures and scratch those up together with a pack of cheap chicken leg quarters … [Read more...]

Kicked Up Turkey Sausage Slow Cooker Soup

Earlier this week we made Butterflied Bacon Turkey. And, where there's turkey, there is always turkey soup the next day. Plus, I kind of wanted an excuse to use my new 7 quart Crock Pot -- love this thing. You can throw as many soup ingredients into it as you want, and it just keeps taking them, like, is that all you got? Keep it coming, woman! To make your broth: As you carve the turkey, just throw the meaty bones into your Crock Pot. Add water to cover, throw in a few spices and some … [Read more...]

Beef and Veggie Fajitas

The other day I picked up a clearance package of that cheap, thin, sirloin tip steak. This is best when you marinate the heck out of it, so I thought it would be fun to try a fajitas marinade I'd scratched up for chicken a while back and see how it worked here. I think the flavor might be even better with the steak, but the only real way to find out is to keep taste testing... and testing... and testing... ;) Beef and Veggie Fajitas Ingredients -- for the marinade One 7 oz can salsa … [Read more...]

Spinach sausage potato strata

It's Sunday! Time for some Sunday Scratchups, old style: AKA, cooking from scratch around grocery store matchups and sales. This week, I picked up some $.25 bags of spinach (it was on sale for $1.00 at my local store, and there was a handy dandy $.75 coupon available). While I was out shopping for spinach, I also spotted clearance Jimmy Dean hot breakfast sausage rolls for $.79 -- so, a couple of those jumped into my cart as well. So, what do you make with a dollar's worth of breakfast … [Read more...]
