This may be the easiest slow cooker recipe in the world. It isn’t fancy, but whenever I ask the kids what they want for dinner, it’s: “Salsa chicken!” The other cool thing about this recipe is that it is super adaptable to both food allergies and special diets. ScratchupsAtkinsDad eats his in a bowl with various burrito toppings, or on salad as kind of a taco salad. Mr. dairy free wheat free 10 eats his on corn tortillas with guacamole, sometimes diced tomatoes, jalapeños, etc. Mr. 6 prefers his on flour tortillas with cheese and sour cream. So, when you can take a base main dish like this and adapt it to various needs, it’s a lot easier than trying to cook one identical meal for everyone while accommodating all special diets.
If you’re in the Chicago area with me, by the way, I highly recommend El Milagro corn tortillas. They’re made locally, gluten free, yummy, and I can pick them up at ALDI for $.33 a pack.
Important note on gluten free
My son is wheat free, not gluten free, so trace amounts of wheat and cross contamination are not a concern for us. While the specific taco seasoning and salsa I used here do not contain obvious gluten ingredients, they are not certified gluten free. If you are gluten free and trying this recipe, you’ll want to make sure the brands you use are safe for your family.
Salsa chicken: The recipe
3 lbs boneless skinless chicken breast. (I probably have closer to four here, but it’s forgiving.)
Packet of taco seasoning
Jar of salsa
Can of corn, drained (if not low carb)
Can of black beans, drained (if not low carb)
Sour cream (if not dairy free)
OK, here comes the hard part, but I know you can handle it! 🙂 Place chicken in slow cooker. Add taco seasoning. Add salsa. Cook on low for 8-10 hours, then shred. If you’re not low carb, add corn and/or black beans in with chicken at beginning. If you’re not dairy free, while you are shredding your chicken, add a couple of generous dollops of sour cream and mix in well. Serve as you would tacos, with similar fixings.

If we weren’t dealing with low carb here, I’d add in the corn and beans at the beginning. If we weren’t dealing with dairy allergies, I’d add in the sour cream at the end. Adapt as desired for your own family! This is also a great one for when you’re in a hurry in the morning — it takes two minutes to throw three ingredients in the slow cooker, and then you can come home to a basically finished meal later. We had ours last night with jazzed up Wholly Guacamole, tortillas, and other taco fixings.
